Every cut we sell is organic, vegetarian safe, and harvested without loss of life. Not one animal has been killed for your sustenance. Not one. Ever.
Non-essential limbing and careful surgery. Donors recuperate in our recovery pasture with a blanket and a friend.
No drugs. No vaccines. No antibiotics. No preventive veterinary care whatsoever, in keeping with our Organic Tradition.
Limbs are trunked in pairs so the donor stays balanced. Cattle receive a custom suspension harness, fitted by hand.
So we stopped asking. In 1971 my father took a scalpel, a great deal of patience, and a willingness to be laughed at by the county. Today our herd eats grass in the morning and provides supper by Thursday, and every one of them wakes up again on Friday.
Quality of life is our essential metric. Smaller donors adjust to ambulation of a tripodilary nature within days — you can see them frolicking in the west pasture most afternoons.
A flexible half-circle tube is implanted in each calf, running from the epiglottis to a collection jar hung at the neck. The calf feeds naturally; a generous percentage is diverted to the jar. Mother and child are never separated.
Collected milk is filtered through clean white cheesecloth so nothing unwanted goes down with it. Half & Half donor milk is available year-round.
That is the whole catalog. There is no third kind.
Non-essential limbing and careful surgery provide the freshest no-kill meat available. Donors are anesthetized with natural, organic poppy extract and cared for lovingly as they recuperate.
Not available on demand, but we keep a rotating stock of well-aged meat. Every donor for these cuts was allowed to die of natural causes in our geriatrics barn, surrounded by old friends.
Nothing here is hidden. Come walk the property on a Sunday.

Married animals, gelded and ovariectomized for spiritual purity, are permitted to mix freely here once they are past breeding age. Lantern light. Fresh straw daily. A plaid blanket for anyone who wants one.
When a natural cause arrives, it arrives on its own schedule. That is why aged cuts cannot be ordered on demand, and why we thank you for your patience.

Aged inventory rotates as it becomes available. Fresh cuts ship the Tuesday after surgery.

All our workers are legal, documented immigrants working here while pursuing citizenship in the bizarre, neo-Orwellian American Citizenship lottery. We keep a pot of coffee on for them and we do not ask about the lottery.
Our milkmaids are Australian.
Received. If your résumé is exceptional, someone will walk down to the mailbox about it.
We publish every comment we receive, including the ones that sting.
